I like this set up — get to the end of the weekend, realize how good it was, blog instead of freak out about the week ahead…
After Friday’s delicious dinner/relaxing evening spent “working”, I had a really good weekend.
Yesterday was low key. I didn’t put on real pants until 4pm. If that’s not bliss, I don’t know what is. I am using the blizzard outside as my reasoning, but I think I’d have done it anyways. Note to self: stay in more often. I got some work done and actually organized my notes and readings for the first time this semester. I’m aware that we’re like halfway through, so I’m pretty glad I finally got around to it!
Saturday means long swim with triathlon club. Hence the having to get dressed. The workout was fun, and I made it through the whole two hours because our coach had us in and out of the pool doing some dry land stuff towards the end. My arms and legs felt a little tired, but I managed to swim faster than I have before on the timed stuff we did — maybe I can just push myself better, or maybe I’m getting a bit better? Either way, I’ll take it!
After swim, we went BOWLING. Did I mention I love bowling? Or that I’m kind of good at it? You should trust me, read my blind date from Friday’s Gazette (note the aforementioned skill at bowling), or challenge me! Anyways, bowling was fun and I am really glad tri club organized it. Yay!
Sunday too? I’m on a roll.
After deciding yesterday that being a baby about having to man up and get off my high
horse bike and teach through this hip thing without hurting it, I started to look forward to the spinathon. Some of the guys in the group (they raised money for mental health, and they were all Schulich—think future docs, etc.—students) made the playlists, which I sat down with this morning and worked out some stuff to do to. I got off the bike for some of the climbing, sat and timed it and spinned easy for other parts, and even got them off their bikes for a round of squats, pushups, and planks. Loved it. I wouldn’t have tried it in a normal class, but 1.5 hours into biking, they wanted a break. Then they wanted back on their bikes. Success! I am so glad I did it – like SO glad.
Apparently when I got home I felt like I’d done the full classes, and I refueled as such. My eats were pretty yummy this weekend, at least some of them are worth highlighting:
Sunday breakfast with tons of berries, mixed vanilla and plain yogurts, and Ezekiel cereal.
Saturday breakfast with pumpkin and yogurt combo, cinnamon, raisins, and Ezekiel cereal.
Saturday lunch was acorn squash with almond butter and raisins, with a spinach salad topped with maple vinaigrette. (same deal, different squash)
Saturday bedtime snack got delicious with greek yogurt, honey, and cocoa hearts.
Tonight’s Sunday Funday was Valentine’s themed! Not depressing at all, and full of aphrodisiac foods! Such a good spread, btu I decided on some pizza with asparagus, whichi s apparently an aphrodisiac. There were so many goodies—pasta, an asparagus flatbread thing from heaven, salads, and so much yummy fruit for dessert with FONDUE. I love fondue. Like I could stick my face in it, and Nina made hers (team effort) with coconut butter, cocoa, some sugar, and coconut milk. Did I mention it was good? I added more dessert to the mix in the form of raw vegan donuts. I googled that and found a recipe from love, veggies and yoga, but I just used it as a guide, so there’s a recipe for y’all! Yeah, I made up a terrible name for them, but whatever. They’re full of flaxseed which is essentially the same as love. Did I mention I also love these people? Cuz I can’t really describe how much happier I’ve been since I got back in the pool and back to talking to them, and ya know what? I’ll just admit it, I don’t remember the last time I had friends like this. So I hope they’re reading this, and feeling kind of special.
In a blender, combine the flaxseeds and maple syrup. Blend ‘til incorporated.
Add remaining ingredients and blend to combine.
Roll into balls, adding more maple syrup if too dry.
Place in fridge to set.
Simple! I sprinkled ‘em with heart shaped sprinkles to make them festive.
This turned into a somewhat epic post.
Know what’s exciting? A week from today I’ll be in Texas. And even though I can’t run while I’m there (which is something I was looking forward to)—I can RELAX. I think I can go on vacation and read a book. That’s what people do, and I’m going to do it. I can’t wait for quality time, sunshine and hopefully lots of sleep! There’s lots to do beforehand—physio appointments, getting my eyes checked, running errands, packing, having a life crisis, etc.—but the light at the end of the tunnel is uber bright!
Holy smokes–I just realized it’s after ten. I wanted to get a few more things done before bed, so I think I better wrap this one up. Are you still reading?
What’d you do this weekend? Best eat?
What are you doing for Valentine’s day?
What do you look forward to most when it comes to a vacation?
